Veg Manchurian has to be one of the most popular IndoChinese dish.
There are two versions of Veg Manchurian-
One is dry which is often served as an appetizer or a snack.
And second version is gravy, which is
served with the fried rice or noodles
I won't say that this is healthier Indo Chinese Recipe
But it sure is the tasty one.
But before we begin the recipe there is one request

So, let's start the recipe.
The taste of good veg manchurian
start with making the crunchy and flavorful Manchurian balls
and spicy gravy
I always add one of my favorite sauce to make it more flavorfull
I am going to share few tips
to make this Veg Manchurian
so it can taste better than what you get in the market
so keep watching till the end.
For making Veg Manchurian balls I have taken
finely chopped cabbage
carrots
french beans
capsicum
onion
spring onion or green onion
ginger-garlic paste which is optional. If you do not eat garlic
just skip it and add only ginger paste.
green chili sauce
little bit of black pepper to spice it up
add salt to taste
but while adding salt take care to add less amount
because the sauces we have added have already some salt in them
Add about a tablespoon of soy sauce
and mix everything to uniformly spread the seasoning
and sauces in the mix.
Now, to bind it all I have added cornflour
and mixed everything for making this type of dough
So, this should be the texture of the dough
Now, grease the palm of your hand
and make ten to twelve (10-12) Manchurian balls
Applying oil on your hand will help you to make smoother balls
So, our Manchurian Balls are ready
and I am ready to deep-fry them
For Deep-frying heat some oil in a wok or kadhai
when you are deep-frying these balls
take care that oil should be hot enough
so that Manchurian balls soak lesser oil.

Now our Manchurian balls are ready
and deep-fried with a golden brown shade
It's time to make Chinese Manchurian gravy for it.
So for making it start by heating oil in a pan
add chopped spring onion
always add some green part of the stem as well for more flavor
so saute this onion on high heat for a minute
and add sliced capsicum
finely chopped ginger
and saute everything for a minute again
Add some garlic paste if you like it
otherwise just skip it.
Keep the heat to high and keep stirring it all the time
We want crunchy veggies, not the burned ones.
So, this step is important. Just keep it stirring all the time
Now, add soy sauce
chili sauce
tomato-ketchup for some sweetness
green-chili sauce
And, now comes my favorite-pepper sauce
this pepeer sauce makes whole change in terms of taste
try it, you will know the difference.
I suggest always add the pepper sauce
when you are making any Chinese gravy

Finally, add some salt
when you are adding salt
always keep in mind that sauces already have some salt
so add accordingly.
The right amount of sauce is most important in any dish
So, now mix all these sauces and bring the heat to the medium-slow
For making thick gravy
make this thin paste of cornflour with the water
add this paste in the pan and add some water as well.
Mix it nicely and then
add water in small quantity at a time
and keep it stirring all the time
The sauces will thicken as you keep heating it.
Now, when the sauce acquire this type of consistency
switch off the heat
and sauces will thicken a bit
after this point also.
Add the Manchurian balls
coat the Manchurian balls with the gravy
and garnish with the chopped stem of green onion
So, our spicy and flavorful
Veg Manchurian is ready
and I am sure this will taste better than the market.
