Today we'll make resaturant style malai kofta
First we'll prepare the koftas
Take 2 medium sized boiled potatoes
About 150gms of potatoes
Boil the potatoes and then let them cool down
Then grate them for use
Add 150 gms of crumbled paneer(cottage cheese)
1 tblsp of finely chopped green chillies
2 tblsp of coriander leaves
1/2 tsp of salt
1/2 tsp of red chilly powder(paprika powder)
Mix them
4 tblsp of maida(all purpose flour)
Mix them lightly
After mixing it properly
Put some oil on the hand
I'm preparing kofta of this shape
You can shape the koftas as you like
Prepare the koftas like this
Koftas are ready
Coat the koftas in maida(all purpose flour)

Fry the koftas in hot oil
Fry the koftas on medium flame
Fry 3 to 4 koftas at a time
Don't put more than that at a time
Flip them
Fry them until golden brown
Take them out
Fry the rest of the koftas like this
Prepare a white paste for the gravy
Put 1 tblsp of poppy seeds(khaskhas)
1 tblsp of kaju(cashewnuts)
Approximately 12 cashewnuts
1 tblsp of dried or dessicated coconut
Grind them
Add 1/2 cup of water and then grind them
Grind them to a smooth paste
White paste is ready
Boil a big sized roughly chopped onion for 2 to 3 minutes in water

You can cook it in microwave also

Make the onion paste in the same jar in which the white paste was made before

Now prepare the gravy
Heat 2 tblsp of oil in a pan
Add 1/2 tsp of garlic paste
1/2 tsp of ginger paste
Saute them lightly
Add 1/2 cup of the onion paste prepared

Saute the onion paste till the water in it dries
Saute the paste till oil separates from the paste
A light golden brown colour is obtained
Saute the paste at a high flame
Add the prepared white paste
Saute it on a low flame
Saute the paste by stirring it continuously
The oil has separated
Add 3/4 cup of tomato puree
Saute it for 5 minutes on low flame
Saute the gravy till oil separates
Keep the flame low
Add 1/3 cup of fresh dahi(curd)
Don't take sour curd
The curd should be fresh and thick
Mix it on a low flame
Add 1 tsp of salt
Or according to your taste
Add 1 1/2 tsp of kashmiri red chilly powder
Add 1 1/2 tsp of kashmiri red chilly powder
3/4 tsp of punjabi garam masala powder

Cover it with a lid and cook the gravy on low flame for 10 minutes

Add 1/2 cup of hot milk

Boil the gravy at a low flame

Add 1/4 cup of malai(fresh cream)
1 tsp of kasuri methi(dry fenugreek leaves)
The gravy is ready. Off the flame
You can put the koftas inside the gravy
Or you can pour the gravy over the koftas in a serving dish

Arrange the koftas like this in a serving dish
Add hot gravy on top of the koftas
Malai kofta is easily prepared
And its tastes delicious
