Toady I am going to learn you How to make chicken dum biryani.
So let's start
To make chicken biryani recipe. Here I have taken 1/2 chicken.
Whom I have washed well with water.
Add 1/2 spoon of turmeric powder.
Garlic & ginger pest 1 table spoon.
Half bowl of chicken biryani mix spice
Add this to the chicken.
If you want more spicy then you can add more masala.
Add curd less than a bowl.
Salt as your test.
Mix it well.
We have to leave it until 4 hours for marinating.
Ok! we will leave it for 4 hours.
To cook rice, I have taken water in the pot.
we will boil the water.
keep the lid on the pot so that water boils quickly.
Water has boiled well.
Now we will add rice.
Here I took special biryani rice.
Here I have taken 1/2 kg of rice. Whom I washed for 2-3 time.
Add rice in the water.
Add 1/2 tsp. of lemon juice.
Oil 1 table spoon.
Add salt as your test.
Mix it well.
We have to cook this rice only 80%.
And remaining will cook in dum.
Rice has cooked 80%.
switch off the gas.
And remove in the sieve for filter the water.
Keep the rice for cold.
Till rice colds, we will fry this chopped onion.
Here I have kept the oil in the kadhai for hot.
Add the chopped onion in the kadhai.
and fry it till it becomes crispy.
onion has got golden brown color.
And also onion has been crispy. so let's remove it.
keep it on the side.
Now I am making chicken gravy.
To make chicken gravy
Now I will make a smooth pest of this with the help of mixy.
I have made a smooth paste like this.
Our chicken has marinated well.
I have kept it for 4 hours.
Now we will make chicken gravy.
put kadhai on the gas.
Add 2 tsp. of oil.
Oil has hot lightly.
Now add bay leaf, cinnamon & star anise.
We have to fry it lightly it gets brown color.
Add 1 tsp of garlic and ginger pest.
Keep gas at low flame and fry it.
Add pest of tomato, ginger, mint and chili pest.
We have to fry it till masala leaving oil.
Oil has left well.
Now I am adding the spice.
Add 1 spoon of garam masala.
1 spoon red chili powder.
Here I had fry onion until crispy.
I am adding it.
And leave some for decoration.
mix it well for few second.
Finally, add marinated chicken.
Mix it well.
Add 1 glass of hot water.
Now we have to cook it for 15 minutes by closing the lid.
Now I am checking our chicken has cooked or not.
Our chicken has cooked well but I have left it raw in less amount.
Because remaining will cook in dum.
switch of the gas.
Take a German pot.
And spread the ghee inside the pot.
Add chicken gravy in the pot.
and now add the cooked rice over the chicken gravy.
Now add fried onion over the surface of the rice.
Here I took red and green color. You can get your favorite.
And simply spread over the rice.
put the lid on the pot.
and now I am spreading the dough.
Set the dough like this so that vapor does not go outside the pot and our biryani will cook well.
and this called dum biryani
Put it on the pan after setting the dough.
Put pan on the gas and do gas on slow flame
Put biryani pot on that pan and we have to cook it for thirty minute.
30 minute has finished.
Now am switching off the gas.
And leave it for 5 minutes for cold.
It has cold right now so we remove dough.
remove the lid.
Our chicken biryani is ready now.
Now, I am removing it in the serving bowl.
Friends our chicken dum biryani is ready.
